Schwansen is the name of the peninsula and an exceptional region in Schleswig-Holstein. This is also reflected in the cuisine. In autumn, caramelised potatoes are served with kale, lightly fried in butter and sugar. In some restaurants, honey from the golden rapeseed fields is used to sweeten the dish. The honey manufactory in Waabs has rare honey creations in its range that tempt with nutty, fruity or Christmas flavours.
